Where most specialty coffees aim for brightness, Sumatra goes deep — earthy, cedary, with a dark chocolate weight that coats the palate. It's divisive.
People who love it, love it intensely. This lot is from the Mandheling region of North Sumatra, grown at 1,000–1,500m on rich volcanic soil near Lake Toba. The defining characteristic of Sumatran coffee is the wet-hull process (Giling Basah) — a method unique to Indonesia where the parchment is stripped from the bean while it still has high moisture content. This produces a distinctive earthy, herbal depth and lower acidity than conventionally processed coffees. Cedar, dark chocolate, and an almost forest-floor character. There's nothing else quite like it.

How to Brew Sumatra
's heavy body and low acidity make it incredibly versatile. Here's how it shines with different methods
- Cafetière / French Press — The best match. Full immersion brings out the earthy depth and chocolate body. Use a coarse grind, 4 minutes steep.
- Espresso — Intense, syrupy, and bold. Pulls a thick crema. Stands up to milk beautifully in a flat white or latte.
- AeroPress — A cleaner cup that still keeps the body. Try a medium-fine grind with 2 minutes brew time.
- Filter / Pour Over — Tames the earthiness and lets the cedar and chocolate notes come through more clearly.
- Whole Bean — Grind fresh for maximum flavour. Sumatra stays bold however you grind it.
